Try this Instant Pot Chicken and Rice recipe:
Ingredients:
– 1.5 lbs boneless, skinless chicken thighs
– 1 cup long-grain white rice
– 1 onion, diced
– 1 bell pepper, diced
– 3 cloves garlic, minced
– 1 cup chicken broth
– 1 can (14 oz) diced tomatoes, undrained
– 1 teaspoon paprika
– 1 teaspoon dried thyme
– Salt and pepper to taste
– Chopped parsley for garnish (optional)
Instructions:
1. Season chicken thighs with salt, pepper, paprika, and dried thyme.
2. Set Instant Pot to sauté mode. Brown chicken on both sides, then remove and set aside.
3. Add diced onion, bell pepper, and garlic to the Instant Pot. Sauté until softened.
4. Add rice, chicken broth, and diced tomatoes with their juice. Mix well.
5. Place the browned chicken on top of the rice mixture.
6. Close the Instant Pot lid, set to sealing, and cook on high pressure for 10 minutes.
7. Once done, allow a natural pressure release for 5 minutes, then quick release.
8. Remove chicken, fluff the rice, and serve. Garnish with chopped parsley if desired.
