This is my 15th year of teaching, but the first year where I have really meal-planned and made all of my lunches on Sunday. It has been a game changer!!
I first bought these Bento Box-like containers from Amazon.
I googled some ideas of foods higher in protein that I would actually eat. I’m not a completely picky eater, but I’m kind of weird about food that is packed ahead of time for meals. I’m also not a huge meat eater, so you’ll see that there isn’t much, if any, meat included. Also, none of these had to be heated up, which is a convenience for me with my 20 minute lunch!
Here are some of the lunches I have made!




Foods of note that are easy to pack:
-hard boiled eggs
-Babybel light cheese
–Back to Nature crackers
–That’s It Bars
-cooked edamame
-berries (I’ll do strawberries, blackberries, and/or blueberries)
–Edamame-Black Bean Salad (still tastes great by Friday!)
-cucumbers
-pickles
–protein muffins
–Late July chips (so good!)
